Chef Evan Hennessey to open restaurant in Dover Waterfront District

DOVER — Renowned local chef Evan Hennessey will open a new restaurant at Dover’s Waterfront District as part of Boston real estate development company Cathartes’ major mixed-use project.
Hennessey is the owner of Stages at One Washington, a high-end restaurant downtown in Dover’s Washington Street Mills. Stages is famous for its take on fresh New England-style food, serving customers at just six seats at the “chef’s counter” as they view the cooking process and interact with the chef.
“I look forward to bringing this new food and beverage concept to Dover,” Hennessey said in a prepared statement. He said the concept is in development, and he will provide more information in 2025. A timeline for when the restaurant will open was not immediately announced.
Hennessey has signed a lease to occupy a 3,700-square-foot space, according to Cathartes. He is the first announced commercial tenant at the waterfront development, which is under construction.
Phase 1 of the Waterfront District development will have a total of 15,500 square feet of commercial space in two mixed-used buildings that will include more than 200 residential units.
Substantial completion of Phase 1 of the overall development project is expected by March 2026, according to Jamie Stevens, the city’s waterfront project construction manager.
Once all phases of the Waterfront District are complete, there will be 26,000 square feet of commercial space and 418 residential units combined in three mixed-use buildings, two multi-family buildings and three groupings of townhomes, according to Cathartes. The project, being done in partnership with Dover, will also include a public waterfront park being constructed by the city.
